Lentils were introduced to North America by European settlers in 16th century and lentils have become an important crop in many regions, particularly in Canada. Today, lentils are grown and consume all over the world. Specially, Canada is a largest producer of lentils.
Chickpeas
Chickpeas also known as garbanzo beans have been cultivated for over 7000 years. There are two main types of chickpeas desi and Kabuli. Chickpeas are highly nutritious and a great source of plant-based protein, fiber and several important vitamins and minerals, including folate, iron and phosphorus.
Peas
Canada is the world’s largest producer and exporter of green peas and the second largest producer and exporter of yellow and maple peas. Peas are excellent source of vitamin K, which is essentially for blood clotting and bone health, as well as vitamin C, which supports the immune system and helps with the wound healing.
Beans
In North America, beans were staple food of many native Americans tribes, who grew several varieties of beans, include kidney beans, pinto beans and navy beans. Beans are popular sources of nutrition and enjoyed in a wide variety of dishes, from soups and stews to salads and dips.
